This went over well with the family, although it was too much food.
I butterflied some tilapia filets (usually there is a thick piece and a thin piece in each filet, I removed the thin piece and saved for another day, and butterflied the thicker piece)
I then salted and peppered them and stuffed them with some creabmeat to which I had added one egg, pretzel crumbs, black sesame seeds and some lime juice.
I heated up a cast iron griddle on the grill
and cooked the fish on it around 7-8 minutes per side
I ended cooking some of the leftover stuffing as well (didn't think it would keep well) and served it alongside.
The kids liked it, even the one who typically claims not to like crab.

Spaghetti and Meatballs
This is a pretty quick dish particularly if you do some prepwork ahead of time. I had seasoned and shaped the meatballs and had them frozen in a bag. I browned them in a pan along with some cut up sausage.
I could have added onions, but I didn't think about it. When they browned on all sides I added a bit of water and some chopped garlic and covered it for around 10 min
I then added some sauce from a jar
I ran outside and harvested some kale that has been growing like crazy in two pots out front.
Chopped it up
and threw it in
By this time the pasta was done (I took a picture but it's really only boiling water) Served it to the family.
They boy really liked it.
