La Quercia acorn edition ribs

My brother was the recipient of the ribs of our La Quercia acorn edtion pig share. He went full acorn edition on it. Smoking the ribs with cherry wood and acorn shells.

for six hours at under 275 deg

The Wood

It was to be served with jalapeno corn bread from their garden

The final result moist, tasty with the fat full of acorn flavor

No se si es el hambre por no desayunar aun... pero que ricas se ven esas costillas y ese pan de maíz...
Se la comieron con ese ahumado que les dieron!! el saborcito me imagino... de ensueño!

We collected many white oak acorns during our bouldering hikes. We smoked it mostly with Oak, and a little cherry along with the acorn shells. We served it with mashed potatoes and collard greens. For desert we made acorn, coconut cookies and acorn syrup to pour over the ice cream. Thank you!!!
