Fish Empanada - video

One onion
One bell pepper
2 cloves garlic
handfull of fresh cilantro
handfull of fresh parsley
teaspoon cumin
tablespoon tomato sauce
4 tilapia filets or other firm white fleshed fish
Store bought premade empanadilla wrappers (goya brand #10)
olive oil
salt and pepper to taste

Sautee the first 7 ingredients in olive oil and season with salt and pepper.
set aside
in the same oil sautee the fish till cooked
combine with the vegetables and let cool

fill the empanada wrappers fold over and crimp on both sides with a fork

fry at 375 deg till golden brown

keep in a warm oven till ready to serve.
